Since our inception, the philosophy behind posana cafe has been to offer a high quality product at a reasonable price while operating in an ecologically conscious manner. One of the ways we achieve that is by sourcing many of our ingredients from local farmers throughout the year. Because Asheville's climate limits the diversity of ingredients that can be grown during the winter months, Posana cafe is unable offer a 100% local menu. Our menu is seasonal and local items are used on the menu year round.
Posana cafe only servers hormone & antibiotic free fresh meats and we initiated a sustainable seafood policy.
The Appalachian Sustainable Agriculture Project has been instrumental in helping us connect with the local farming community. We are proud to be a member of ASAP. We have held two benefit dinners supporting ASAP’s Growing Minds Program and donated 100% of the proceeds generated during those events.


In 1948, Dick Jennings returned from WWII to his grandfather’s land in the mountains to create the first commercial trout farm in the Southeast. Today, his daughter Sally Eason leads the company and Sunburst Trout is nationally renowned for environmental responsibility and extraordinary quality. Sunburst Trout are raised in well- oxygenated water that flows directly from the Shining Rock Wilderness area of Pisgah National Forest. Without a good source of water, trout farming simply can't be done. Here at Sunburst Trout Co., we are blessed with an abundance, allowing us to offer you delicious natural food gifts, natural caviar gifts and natural seafood. Without it, we would be just another trout farm. These high water flow rates are a leading contributor to the plumpness and firmness of our fish. Our trout exercise when swimming against these currents, and the result is very firm fish.


At East Fork Farm, the Robertson family grows natural, nourishing foods--pasture raised lamb, free range poultry, and pond raised trout, without added hormones or antibiotics. The Robertsons treat their animals humanely and farm their land sustainably, using farming practices that preserve ecological health. East Fork Farm is a designated River Friendly Farm.


Every morning, families in the mountains wake up and enjoy fresh Farside Farms eggs. Farmer Mike Brown's goal is to provide a healthy, safe, fresh product that tastes great.
To do this, he makes his own feed for his animals right on the farm, ensuring the feed is high quality, mixed right, and contains no added antibiotics or hormones. This results in a premium product: farm fresh eggs you can trust to be healthy, safe, and delicious.


Chris Sawyer and Missy Huger farm over seven acres of certified organic lush mountain land just outside of Asheville, NC. They built the farm from scratch ten years ago and named it after their loyal dog Jake. Chris and Missy believe that growing organic produce is simply the right thing to do for the land and for their customers.


Looking Glass Creamery is the home of fine handcrafted, small batch, artisanal cheeses. We are a small, family owned and operated creamery located in the mountains of Western North Carolina. We start with fresh raw milk that we buy weekly from several local farms and process it in small batches to make a limited variety of goat and cow milk cheeses. We strive to produce an excellent product made with no artificial preservatives, stabilizers, or additives and free of added growth hormones or other unnatural ingredients. Our cheeses contain only milk, cultures, seasalt, and rennet along with the occasional herbs and spices from the best sources.


Jamie and Amy Ager are the fourth generation to farm the 600 acres of Hickory Nut Gap Farm. They strive to mimic nature in a “perennial polyculture” that includes open fields and woodlands, grass-fed cattle, pastured turkeys and chickens, lambs and pigs. “We maintain open land the way that nature has always done it,” says Jamie. When customers buy Spring House Meats, they get delicious foods from humanely raised animals.


Apple Brandy Beef is raised on third generation family farms in the foothills of Western North Carolina. For generations, the Church family has been caring for quality beef herds in the lush green pastures of these hills.
Apple Brandy Beef cattle are fed a locally grown corn based diet without any
added antibiotics or hormones.


Spinning Spider Creamery is farmstead dairy in Madison County, NC offering a variety of fresh and aged goat cheeses. The entire family participates in the operation of the creamery, from the care of their Sanaan and Alpine goats to the handcrafting of artisan cheeses.
The end result is a wide variety of high quality cheeses, brought to their fullest complexity of flavors through close attention to detail in an Old World style.


In antiquity, the Three Graces brought beauty, mirth, and hospitality to the gods. Sacha and Roberta’s three graces are the goat, the sheep, and the cow that give the exquisite milks that inspire their cheeses.
The mother and daughter team makes French-style farmstead cheeses on the historic Madison County farm where they raise their animals.


Brasstown Beef raises and sells all natural beef and pork products; raised without antibiotics or growth hormones. Beef is two weeks dry aged and two weeks vacuum packed. Animals are grain-fed with access to grass. Sows are kept in pastures and are not farrowed in confinement.
Brasstown Beef practices the following: Conventional, Humanely Raised, Integrated Pest Management (IPM), Pasture Raise.


Because Margaret and Tim love gourmet food, they’re ideal growers for restaurants. They provide French and Italian heirloom specialties for several Asheville dining establishments. “We go and eat at restaurants before we sell to them—we want to know that they’ll appreciate our food,” Margaret says. Tim and wife Margaret McGinnis vend at both the Madison County Farmers and Artisans Market and the Weaverville Tailgate Market.


Nestled in the rolling foothills of Polk County, Sunny Creek Farm produces all sorts of sprouts. The solar powered growing facility boasts a high tech lab where each batch of alfalfa, radish, mung, and mixed bean sprouts are checked for pristine purity before being sent out to hundreds of markets in Western North Carolina and across the Southeast. The owners, Lee Ewing and Ed Mills, are proud of the business they have built and the fresh, healthy, delicious sprouts they harvest and deliver to you.


Haw Creek Honey | Asheville, NC
What started out as a hobby has turned into a business for local beekeeper Greg Rogers, owner of Haw Creek Honey.
Honey is considered the only food that includes all the substances necessary to sustain life.


Coastal Cattle | Ayden, NC
Coastal Cattle in Ayden, NC is a supplier of locally grown, all natural, 100% Angus beef. No growth hormones, chemical feed additives or antibiotics have been used in the life of a Coastal calf. Only certified all natural feed provided by Southern States, top quality hay, and a mixture of fescue and bermuda grass for grazing make up the diet.

That's when a little-known dairy farmer named Milo Jones had an inspiration: to make sausage from his mother’s cherished recipe and sell it to friends near and far. Soon, word of Milo's great tasting sausage spread. And his dedication to quality and hard work paid off as his new business began to grow. Before long, he added bacon and ham to his product line and orders came in from all over the country. Today, six generations later, the Jones family still operates the original farm in Fort Atkinson, Wisconsin. And Jones Dairy Farm remains a family-run and family-owned operation. Which is why they've been able to maintain those same high-quality standards set down by Milo over 100 years ago.
